"How do I determine the length of the entire spout (not just the handset) on my KWC faucet?"
The measurement from the center of the faucet (straight down through the handle) to the center of the outlet on the handset is considered the length of the spout itself. If that measurement is 7 inches, then you need the 5-inch handset; if the measurement from the faucet center to the center of the outlet is 9 inches, the 7-inch handset is the correct replacement.
"How do I measure just my pull-out handset (not the entire spout) to determine if I need the #Z.504.308 five-inch or the #Z.504.212 seven-inch sprayhead?"
Because the handset lengths that we list are measured from the threaded end (where your hose screws on) to the tip of the spout, you should be able to determine the spout you need by unscrewing it from the hose and measuring it from end to end (either 5 inches or 7 inches).
